This french toast casserole is a HUGE hit here at our home... it is not Paleo...nor gluten-free, though you could use gluten-free bread...or 'paleo bread' (I won't even go there with my eye roll)...
Now that we spend our morning homeschooling and being together most days... which is a dream come true, this recipe is the cherry on top! It makes breakfast feel like a special celebration of family.

Fresh or Stale peasant bread loaf cut thick.
1/2 cup apple cider
1/3 cup of caramel vodka or rum.
1/2 cup butter
1 apple
1/2 cup chopped walnuts
6 eggs
1 cup milk
2 tbsp brown sugar
2 tbsp real vanilla extract
1 pinch of fresh nutmeg
2 pinches of cinnamon (or as much as you want)
Directions:
Preheat oven to 350
Grease 9: x 11" pan with butter
Lay thick pieces of bread in pan.
Cut apple into small wedges, place in pan between and on bread. Spread Walnuts over the bread and apples. Combine cider and caramel flavored vodka and poor over bread. Let the bread soak that mixture up while you do the rest of the recipe. Melt remainder of butter and combine brown sugar, cinnamon, vanilla, nutmeg with melted butter. In a different bowl combine milk and eggs... whip together then poor over bread. Poor butter with b.sugar, cinnamon, vanilla, and nutmeg over the bread. Sprinkle some additional cinnamon on bread.
Cover. Bake for 40-ish minutes. Enjoy!!!
